Massaman is one of those curries that can't be rushed - and Tommy doesn't try. Chunky beef chuck and mince are slow cooked together for six hours with onion, shallots, garlic, lemongrass, galangal, tamarind and Thai spices until the beef is genuinely tender and the gravy has thickened into something you'd want to eat on its own. Coconut cream, potato and fresh coriander finish it - then the whole thing gets wrapped in Tommy's light, flaky roti paratha. The result is a pie with the kind of depth that only comes from time and patience.
